Ingredients for Small Sweet Martabak Sweet Cakes Bakery

  • 1 kg of wheat protein
  • 335 gr of sugar
  • 1 tablespoon of instant yeast
  • 4 egg yolks and 2 egg whites,
  • 2 sachets of vanilla
  • 10 gr of good quality milk powder
  • 1 tsp of salt
  • 1100 ml of coconut milk from a half coconut
  • 5 ml of cake softener if there
  • 40 gr of butter

Methods of Sweet Cakes Bakery

  1. Heat the butter in a wok over low heat, turn off fire when the butter almost melts, let the rest of the butter to melt itself. Set aside.
  2. In large mixing bowl, pour in sugar, instant yeast, eggs, vanilla and milk powder, mix it using a mixer starting from the lowest speed, gradually increase the speed, use a large spoon to help stir the dough so that sugar will dissolves quickly and mixer does not collide the bottom of the mixing bowl. 
  3. Once the sugar is dissolved, put the flour, salt, cake softener, stir it again until it is completely mixed, it takes about 10 minutes, just do not use the highest speed of your mixer. Add the melted butter in and stir briefly until it forms smooth dough.
  4. Cover the dough use anything and let it stand 1 hour or until it is fermented.
  5. After 1 hour of fermentation, add Cake soda and mix well with a spoon manually. After this, the dough is ready for baking.

Do not add more sugar than suggested in this recipe because martabak will burn quickly. It takes some time to be smart in baking in terms of adjusting the fire(heat). If you want to make 500 grams of flour for the dough then you can adjust the rest of the ingredients accordingly. 

Tips of Cakes

If you do not like yeast, you do not need to use yeast. But without yeast the result may not be as good as the one using yeast, whereas if you use instant yeast, the result will be better.

DO NOT USE MARGARINE, it results the cake will not be that soft and fragrant when the cake turns cold.

Caution

  • Always use low heat until the cake is completely cooked.
  • The use of high heat will result the outer cake to be overcooked while the inner part is undercooked.

Important: Once the batter is poured into the mold do not cover it immediately, let it perforate bit, then cover it.

How to bake for the first time using normal cake pan (cake mold) and non-stick cake pan (cake mold)?

  • Wash mold using delicate sponge to clean, make sure you rinse it real clean and no soap residue is left on the pan. Then use a dry cloth to wipe it, and let the mold to rest for at least 2 hours to prevent sticking. After that, the mold can be used for baking.
  • The trick is, heat the mold over the lowest heat and grease with new cooking oil or margarine for each hole.
  • Make sure when you pour the batter, the mold is hot enough.
  • To know if the mold is hot enough you can place your palms above the mold to feel the heat. You should pour the dough quickly once you remove the cooked martabak from the pan (mold) in one baking session. Do not forget to stir the batter before pouring it into the mold. You’ll need to take some time to master the technique in adjusting the heat.

  2. Colorful messes, get messes from several different colors and mix with the brown one. Colored messes just tastes as sweet and not special, if we mix with the chocolate one it will help taste delicious.
  3. Chopped or mashed ground peanut. You can buy the ready-made chopped ground peanut but of course it is expensive. If you want to make your own chopped ground peanut, here is the method; roasted peanuts are roasted, with pans of clay under medium heat, after the skin peels off and nuts cooked, remove the skin. Crush the peanut nuts coarsely.
  4. Smooth strawberry jam

Use piping bag and fill it up with jam. Cut the tip of the piping bag, squeeze some dollop of the jam over the sweet martabak.
